About the Author

SAM JONES is the owner of Sam Jones BBQ and the grandson of Pete Jones, founder of the Skylight Inn in Ayden, North Carolina, which won a James Beard Award and has been open since 1947—and which is where Sam started honing his chops as a boy. He returned to the family business after rediscovering barbecue through writing a 15-page essay on the topic for a college assignment. DANIEL VAUGHN is the country''s first barbecue editor. He holds this post at Texas Monthly magazine and has also contributed to Bon Appétit, Lucky Peach, First We Feast, Los Angeles magazine, and Time. He is the author of Prophets of Smoked Meat.

I thoroughly enjoyed this book. Being from Texas, whole hog barbecue is uncommon but getting more popular. I first heard of Sam Jones tell his story on a podcast and this man can tell a story. I knew when his book came out I had to give it a read. His story is inspirational and fascinating to anyone who finds the history of barbecue interesting. This would be a five star book just with his storytelling but he includes recipes from his family and his restaurants as well that make it a must have. I’m planning a trip to Ayden to the historic Skylight Inn and Sam Jones BBQ now to experience what real whole hog bbq is. Thanks for the great book.

I can tell you that Sam Jones is the standard that all pit masters aspire to be. If you want to learn the process of the old timey eastern nc way to cook whole hogs & some recipes for sauces and sides, this is the only book you will need. Thanks Sam for keeping the tradition of your granddad and your dad alive. If you ever make it to Greenville NC, Sam Jones BBQ is the finest in Eastern NC.

You will find good BBQ in Eastern NC, but NOT as good as that from the Skylight Inn or Sam Jones BBQ. Period.
